A cheesey new year for all!

We wanted to share a letter written to our dairy CSA members by the dairy manager Aitan. We’ve been selling cheese and yogurt through the CSA, at Chubby Bunny and Whipporwill Farms and at various sales in NYC. Cheese or yogurt mixed with honey is a delicious and sweet way to bring in the new year.  L’ Shanah Tova!

Dear dairy memebers,

We’re half way through the season and we wanted to hear from you.  How are you enjoying your cheeses and yogurts?  What can we do to improve?  Any great recipes you use the cheese and yogurt with that you would like to share?  Your feedback is a valuable component of our relationship.

Here on the farm all is well.  The girls are loving the cool weather.  They spend their days runty and marisaperusing the woods for tasty treats.  Milk production is high and the cheese is constant.  As the weather cools down you’ll notice a creamier cheese.  This is because the girls will be reducing the amount of milk they make and focusing on increasing the fat for the winter.  This fat gives the cheese a richer flavor. Yumm.

The summer session of Adamah has ended and the fall session begins on the 13th.  In the meantime it’s me and our new dairy apprentice, Meira Goodman (Adamah Fall ’06), milking the goats and crafting the cheeses.  Meira is a wonderful addition to the team offering a high level of enthusiasm and commitment.

We have a lead on a Nubian buck for breeding season.  Our hope is to use his services this fall to help increase our herd size.  We’ll keep you updated on the action.
