Jamie, Yonah, Ibby (Sap Queen Apprentice), and I tapped the sugar maples around camp just a week and a half ago, and we’ve already made our first batch of smokey and delicious syrup. The process of tapping trees, collecting sap, chopping wood for the fire, and keeping the fire stoked is both incredibly exciting and exhausting. I especially appreciate the constant flow of visitors to the “Sugar Shack” where the evaporator is located. Freedman employees and staff stop by for sap collection updates and syrup taste-testing opportunities. Spring is in the air, and I’ll be sure to keep you posted on my maple syrup making adventures!
